Corn husks

Corn husks are the dried outer leaves wrapping corn ears. In the kitchen they are not eaten, but used as a traditional wrapper for steaming. Before use they are soaked in warm water to soften. An indispensable ingredient for Mexican tamales, corn parcels filled with chicken, pork, or sweet fillings, Brazilian pamonha, Peruvian humitas, and other Latin American dishes. They impart a subtle corn aroma and retain moisture during cooking.
