Cod fillet is a white, lean saltwater fish with a mild flavour and firm, flaky flesh. The Atlantic cod (Gadus morhua) is one of the most widely consumed fish in the North Atlantic and its meat is valued worldwide. In the kitchen, cod fillet is ideal for frying in batter, baking, poaching, and also works well in soups or fish pies. It is an excellent source of protein, vitamin B12, iodine and selenium. Its low fat content makes it suitable for low-fat diets. Available fresh, frozen and salted. It cooks quickly and easily, though care should be taken not to overcook it.
