Russian Sour Fish Soup Solyanka

Fish solyanka is an iconic Russian sour soup in which salmon and cod meet pickled cucumbers, capers and olives in one bold, aromatic flavor. Step by step process

Preparing the vegetable base

    For the solyanka, finely chop the onion. Saute the onion in butter over medium heat until golden, about 4 minutes.

    Add the diced tomatoes and tomato paste, stir and cook for 3 minutes until everything starts to combine.

Cooking the soup

    Bring the fish stock to a boil in a pot. Add the vegetable base and bay leaf.

    Slice the pickled cucumbers into thin strips or rounds and add to the soup. Simmer for 10 minutes over low heat.

Adding the fish and seasoning

    Cut the salmon and cod fillet into larger pieces (about 3-4 cm). Add the fish pieces, olives and capers to the soup.

    Cook for 8-10 minutes until the fish is cooked through. Season with salt, pepper and the juice of half a lemon.

Serving

    Ladle the soup into deep bowls. Add a spoonful of sour cream and a slice of lemon to each serving.

More tips:

Add the fish at the very end and cook briefly, or it will fall apart and cloud the soup.

Adjust the sourness with pickle brine or lemon after cooking, to your taste.
