Tequila is a Mexican spirit made from blue agave (Agave tequilana Weber) grown primarily in the state of Jalisco. It has a protected geographical indication similar to champagne. The heart of the agave is roasted, crushed, and fermented, then distilled. There are blanco (unaged), reposado (aged 2-12 months), and añejo (aged 1-3 years).
