Salmon with Maple Syrup and Mustard

Salmon with maple syrup and Dijon mustard is a quick Canadian classic that looks festive yet works on a weeknight. The fish fillet is first seared hard in a pan to build a golden crust, then finished in the oven until juicy. Sweet syrup, sharper mustard and a splash of soy sauce form a glossy, sweet-and-salty glaze. It is served with rice or salad and lands on the table in just 30 minutes.

Step by step process

Preparation

    Preheat the oven to 180 °C (or 200 °C fan). In a bowl, mix together the maple syrup, Dijon mustard, soy sauce and crushed garlic to make a flavorful maple-mustard glaze.

    Pat the fillets dry with kitchen paper, then season with salt and pepper on both sides.

Baking

    Heat the olive oil in a frying pan over medium-high heat and sear the fish for about 2 minutes on each side until golden.

    Transfer to a baking dish and pour the maple-mustard marinade over it.

    Bake for about 8 to 10 minutes until the flesh flakes easily with a fork.

Serving

    Serve immediately with steamed rice or green salad. It also pairs beautifully with roasted potatoes or blanched broccoli.

More tips:

Add the maple syrup only after searing, at too high a temperature in the pan the sweet component could burn.

Instead of Dijon mustard, you can use wholegrain mustard, which gives the marinade a more interesting texture and a slightly stronger flavor.
