Slice the cucumber thinly and cut the red onion into very thin rings. Drain and pat dry the capers.

Split the bagels horizontally and lightly toast them until golden, so they're crisp on the outside and warm inside.
TIP:Use a dry skillet over medium heat and toast the cut side of the bagel for 1-2 minutes until it turns golden. For extra crispness, finish briefly in the oven under the broiler.

Cut the smoked salmon into slightly wider slices so it layers well on the bagel and covers the surface evenly.
Serving

Spread a generous layer of the herb cream cheese on the bottom halves of the bagels, add arugula, and evenly arrange the smoked salmon slices.

Add cucumber slices, red onion rings, and, if desired, scatter capers. finish with a light grind of pepper to taste.

Place the top half of the bagel, press gently, and serve immediately so the bread stays crisp.
More tips:
For a milder onion flavor, soak it in cold water with a splash of lemon for 5 minutes, then drain and dry. It will lose its bite and stay crisper.
