Russian zapekanka with cottage cheese and raisins

Zapekanka is a Russian cottage cheese bake, something between a pound cake and a cheesecake, only without any dough and much lighter. Instead of flour, fine semolina holds the mixture together, swelling as it bakes to give the bake a moist yet firm texture. Sweet raisins hide inside, and the whole thing is served warm or cold with a spoonful of sour cream. In Russia, zapekanka is a classic breakfast and school lunch, made from everyday ingredients in just a few minutes.

Step by step process

Preparing the cottage cheese batter

    Preheat the oven to 180 °C (350 °F). Place the cottage cheese in a bowl and mash with a fork or hand mixer until smooth. This zapekanka relies on the natural properties of cottage cheese, the smoother the base, the fluffier the result.

    Add the eggs, sugar, vanilla sugar and salt to the cottage cheese. Mix thoroughly until smooth. Fold in the softened butter and semolina, the semolina replaces flour and gives the zapekanka the right consistency.

    Add the raisins and gently fold in. Let the batter rest for 5-10 minutes so the semolina absorbs moisture and the mixture firms up slightly.

Baking and serving

    Generously grease a baking dish (approx. 20x30 cm or a round 24 cm) with butter and dust with semolina or breadcrumbs. Transfer the cottage cheese batter to the dish and smooth the surface with a spoon.

    Bake in the preheated oven at 180 °C for 35-40 minutes until the top is golden brown and the casserole is set. Allow to cool for 10-15 minutes before unmoulding.

    Serve warm or cold, sliced into portions. Traditionally served with sour cream, jam or fresh fruit.

More tips:

Use semi-fat cottage cheese, a runny mixture will not set and stays wet in the middle.

Soak the raisins in warm water or rum before mixing so they turn juicy and soft.
