Step by step process

Prepare the batter

    Place the farmer's cheese, egg, granulated sugar, vanilla sugar, and a pinch of salt in a bowl, then mix thoroughly until you have a thick, cohesive mixture with no large lumps.

    Add the plain flour and mix again to form a soft but shapeable dough that holds together and does not stick too much to your hands.

    TIP: 

    Fritter batter should be soft and pliable. If it spreads too much, add a little flour. If it is too stiff and dry, add a tablespoon of liquid or a moister ingredient. Properly prepared batter holds its shape, and the fritters will stay tender after frying.

    Lightly dust the work surface with flour and shape the dough into small patties about 1.5 centimetres thick, then lightly coat them with flour on both sides.

Frying

    Heat a thin layer of sunflower oil in a frying pan over medium heat so the patties cook gently and do not brown on the outside before warming through in the middle.

    TIP: 

    Fry the patties in a thin layer of fat over medium heat. If the pan is too hot, they will quickly burn on the outside while remaining raw inside. Try frying one first and adjust the heat according to how it browns.

    Fry the syrniki in batches for about 3 to 4 minutes on each side until golden, turning them carefully with a spatula and adding a little more oil between batches if needed.

    Let the cooked patties rest briefly so they firm up while staying soft and tender inside.

Serving

    Serve the syrniki while still warm with sour cream and jam, spooned on top or served on the side according to taste.

    For a more traditional serving, offer the patties only with cold sour cream, which pleasantly balances their sweetness.

More tips:

If the dough is too loose, add a little more plain flour, but only in small amounts so the syrniki stay delicate.

For the best result, use well-drained farmer's cheese without excess whey, as the patties will hold their shape better during frying.
