Prepare the batter

To make syrniki, place the farmer's cheese, egg, granulated sugar, vanilla sugar, and a pinch of salt in a bowl. Mix thoroughly until you have a thick, cohesive mixture with no large lumps.

Add the plain flour and mix again. The dough should be soft but shapeable, holding together without sticking too much to your hands.

Lightly dust the work surface with flour and shape the dough into small patties about 1.5 centimetres thick. Coat them lightly with flour on both sides.
Frying

Heat a thin layer of sunflower oil in a frying pan over medium heat. The patties need to cook gently so they do not brown on the outside before warming through.

Fry the syrniki in batches for about 3 to 4 minutes on each side until golden. Turn them carefully with a spatula. Add a little more oil between batches if needed.

Let the cooked patties rest briefly so they firm up while staying soft and tender inside.

Serve the syrniki while still warm with sour cream and jam, spooned on top or on the side to taste.

For a more traditional serving, offer the patties only with cold sour cream. It pleasantly balances their sweetness.
