Rice Salad with Peas and Corn

Step by step process
Cooking the rice

For the rice salad, first cook the rice. Tip it into boiling salted water and cook for 15 minutes, until tender but still loose.

Drain the cooked rice in a sieve and rinse it under cold water so the grains cool down and stop sticking together. Let it drain thoroughly.
Vegetables and ham

Drain the sterilized peas and corn and leave them in the sieve to shed excess liquid, so their brine does not thin the dressing. The drier the ingredients go into the bowl, the better the dressing holds later.

Cut the cooked ham and red bell pepper into small dice so they match the size of the peas and corn.
Dressing and assembly

In a bowl, whisk the mayonnaise and sour cream until smooth and season with salt, ground black pepper and a pinch of sugar. The dressing should stay just creamy enough to coat the grains without making them soggy.

Transfer the cooled rice to a large bowl and mix it with the peas, corn, ham and pepper. Finally fold in the dressing until it nicely coats every grain.

Let the finished salad rest in the fridge for at least an hour so the flavors meld, then season with a little more salt and pepper before serving if needed.
More tips:
Cook the rice a day ahead and keep it in the fridge overnight. Cold rice does not clump in the salad.
Drain the peas and corn thoroughly in a sieve before folding them in.
