Czech potato salad with peas and salami

Boiling the potatoes and eggs

For the Czech potato salad, first boil the potatoes. Cook the washed potatoes in their skins in salted water until tender, about 20 minutes, then drain and let them cool completely.

Meanwhile, boil the eggs until hard, roughly 10 minutes, then chill them in cold water and peel. Let them cool fully, as warm eggs crumble easily when chopped.
Chopping and dressing

Peel the cooled potatoes. Dice them together with the salami and pickled cucumbers into small cubes and tip into a large bowl. Add the well-drained canned peas and finely chopped eggs.

In a separate bowl, stir the mayonnaise with the mustard into a smooth dressing. Season with salt and pepper. Then gently fold the dressing through the bowl so every ingredient is evenly coated.
Chilling and serving

Cover the finished mixture with foil. Let it rest in the fridge for at least 3 hours, ideally overnight, so the flavors blend.

Before serving, stir everything once more. Adjust the salt and pepper. Serve it well chilled with fresh bread as a starter or a light dinner.
More tips:
Choose firm, waxy potatoes so they hold their shape when diced and the salad stays neatly cubed.
Use a mild luncheon or ham salami, as strongly spiced kinds would overpower the salad.
