Sejkory, Czech Griddle Potato Pancakes

Sejkory are pancakes that were never fried in the Czech mountains. Raw grated potatoes with a little flour are cooked dry on the hot plate of a wood-fired stove, and a cast-iron pan does the job at home. They come out thinner and drier than regular potato pancakes, smell of smoke and need nothing but butter or a spoonful of plum jam. A mountain dinner for pennies that still tastes great today.

Step by step process

Batter

    Peel the potatoes for the sejkory and grate them finely. Let the grated mass drain in a sieve for a while and squeeze out the excess water with your hands, the pancakes will then hold together even without frying.

    TIP: 

    Grate the potatoes finely and immediately transfer them onto a clean towel or cheesecloth. Firmly squeeze out the excess water so that the dough isn't too watery. This helps the patties hold their shape better and prevents them from being watery or less crispy when frying.

    Mix in the flour, egg and salt. The batter should be about as thick as American-style pancake batter. If it turns out thinner, add a little more flour.

Cooking on the griddle

    Heat a cast-iron pan or griddle over medium heat and do not grease it, the pancakes are cooked dry. Ladle out thin pancakes and cook them until the underside develops golden-brown spots. Treat the first pancake as a test and use it to fine-tune the heat.

    Flip the pancakes and finish the other side. Spread the finished sejkory with butter right away and stack them in a kitchen towel, they will stay soft.

Serving

    Serve warm, spread with plum jam or just with butter. Sweet or savory, as a mountain dinner should be.

More tips:

You will get closest to the mountain taste on a cast-iron pan or a metal sheet set over a grill.

Sejkory work savory too: instead of plum jam, spread them with lard and cracklings.
