Beef Shin Goulash

Peel and finely chop the onion.

Peel and finely chop the garlic.

Cut the beef shin into larger cubes (approx. 3 × 3 cm) and let the meat come to room temperature before cooking.
Cooking

Heat the lard in a pot and add the chopped onion. Sauté over medium heat slowly until golden to dark brown (approx. 15-20 minutes), taking care not to burn the onion.

Sprinkle in the sweet ground paprika, stir quickly, and immediately add the meat. Sear the meat briefly over high heat on all sides to seal it.

Add caraway, ground black pepper, and crushed garlic, and season with salt.

Pour in part of the hot water, stir, and simmer covered over low heat for about 90 minutes, until the meat is nearly tender.

Gradually add the remaining water and stir regularly during simmering to prevent the goulash from sticking or burning.

Once the meat is tender, stir in marjoram and adjust seasoning with salt or pepper if needed.

If the sauce is too thin, increase the heat and reduce it uncovered to the desired thickness.
Serving

Serve the hot goulash with fresh slices of bread. Garnish with fresh onions or pickled hot peppers to taste.
More tips:
If you want a thicker goulash, you can grate some bread and stir it into the base to thicken.
Beef goulash tastes best the next day, when the flavors have melded.
