Beef Shin Goulash

Step by step process
Preparing the meat

Peel and finely chop the onion.

Peel and finely chop the garlic.

Cut the beef shin into larger cubes approximately 3 x 3 cm. Leave the meat to come to room temperature for half an hour before cooking.
Slow cooking

Heat the lard in a pot and add the chopped onion. Fry slowly over medium heat until golden to dark brown, about 15 to 20 minutes. Take care not to burn the onion.

Add the sweet ground paprika and stir quickly. Add the meat immediately and sear it on all sides over high heat until sealed.

Add caraway seeds, ground black pepper and crushed garlic. Season with salt.

Pour in some of the hot water, stir and simmer covered over low heat for about 90 minutes until the meat is almost tender.

Gradually add the remaining water. Stir regularly to keep the beef shin goulash from catching on the bottom.

Once the meat is tender, stir in the marjoram. Adjust seasoning with salt or pepper.

If the sauce is too thin, turn up the heat and reduce uncovered to the desired thickness.
Serving

Serve the hot goulash with fresh slices of bread. Add fresh onion or pickled chillies to taste.
More tips:
If you want a thicker goulash, grate some bread and stir it directly into the base to thicken.
This dish tastes best the next day, when all the flavours have melded together.
