Soybeans
Soybeans are legumes originating from East Asia and among the richest plant-based sources of protein in the world. Immature green beans, known as edamame, are boiled in their pods and served as a light starter or side dish. Mature dried beans are cooked and used in soups, stews, salads, or further processed into tofu, tempeh, miso, and soy milk. They have a mild, slightly nutty flavour. They are rich in essential amino acids, healthy fats, dietary fibre, iron, and calcium. In Asian cuisine they are a staple ingredient, and in European cooking they are gaining popularity as interest in plant-based diets grows.
