Non-alcoholic sparkling wine

Non-alcoholic sparkling wine is made from ordinary wine whose alcohol is removed by vacuum distillation or membrane filtration, or directly from grape must carbonated with carbon dioxide. In taste and bubbles it resembles sparkling wine, but the alcohol content drops below 0.5 percent. In the kitchen it serves as the base for alcohol-free cocktails such as Bellini or Mimosa, and it works wherever a drink should look festive but must not contain alcohol. Serve it well chilled, around six degrees, in a tall glass that holds the bubbles.
