Dried fava beans
Dried fava beans, also called broad beans, are the mature seeds of one of the oldest cultivated legumes. They have a rich, slightly nutty taste and a floury texture, and they are packed with protein and fiber. They are a staple of Moroccan and Middle Eastern cooking — the thick soup bissara and the famous ful medames are both built on them. Soak them overnight before cooking and peel the tough skins off larger beans. Use them in soups, dips and stews.
