Apricot Compote
Apricot compote is a preserved fruit product made by cooking apricots in a sugar syrup. During preparation, the apricots retain their golden-orange colour, tender texture and sweet flavour with slightly tangy notes. Compote can be prepared at home or purchased in tinned form. In the kitchen, it works beautifully as a dessert on its own, as well as a filling for cakes, buns and crepes. It can also be added to fruit salads and served alongside yoghurt or cottage cheese. The syrup from the compote can be used to make fruit drinks or to flavour sauces. Homemade apricot compote tends to be less sweet and more aromatic than commercially produced versions.
