Lokse and Flatbreads

Baked flatbreadsPotato baseSlovak tradition

Lokse and flatbreads are thin, soft bread preparations that serve as versatile accompaniments or wraps for various fillings. Lokse are traditional Slovak and Moravian potato flatbreads cooked on a dry griddle, often filled with goose fat, poppy seeds, or jam. Other flatbreads include Indian naan, Middle Eastern pita, and Italian focaccia. These unleavened or lightly leavened breads are quick to prepare and bring a wonderful artisanal element to meals alongside soups, stews, and grilled dishes.

Cook thin lokse and flatbreads at home.
