Basic pancakes from flour, milk and eggs are easy for anyone. Just whisk the batter smooth, let it rest and fry thin pancakes in a little oil until golden. Great with sweet or savoury fillings, for breakfast or a quick dessert.

Step by step process

Preparing the batter

    For the basic pancakes, sift the flour into a bowl, add the sugar, vanilla sugar and a pinch of salt, then briefly mix.

    Whisk the eggs with part of the milk, pour into the flour and whisk into a smooth batter without lumps. Then gradually whisk in the rest of the milk to make a thinner pourable batter.

Resting the batter

    Let the finished batter rest for 15 to 30 minutes at room temperature so the flour swells and the pancakes turn out soft and flexible.

Frying

    Grease the pan with a little oil and heat it over medium heat. Ladle a thin layer of batter onto the pan and swirl it evenly across the whole base.

    Fry for about a minute until the underside turns golden, then flip the pancake and fry the other side too. Stack the finished ones on a plate and repeat until you use up the batter.

More tips:

Let the batter rest for a while so the gluten relaxes and the pancakes turn out softer and more flexible.

The first pancake is usually a tester, use it to adjust the pan temperature and the batter thickness.
