Juicy pan-seared steak

Step by step process
Preparing the meat

Take the meat out of the fridge at least 30 minutes beforehand so it reaches room temperature. Even doneness is otherwise difficult to guarantee.

Pat it dry with paper towels and lightly brush both sides with olive oil.
Searing in the pan

Heat the pan over high heat and wait until it is truly hot. A drop of water must sizzle immediately.

Place the steak in the dry pan and sear without moving for 2-4 minutes, depending on desired doneness.

Flip it and sear another 2-4 minutes on the other side.

Use tongs to press the meat lightly so it has even contact with the pan.

Transfer the meat to a cutting board and let it rest for 5 minutes so the juices stay inside.
Serving

Season the meat with salt and pepper to taste, then slice.

Serve immediately, for example with fresh vegetables or roasted potatoes.
More tips:
For more pronounced flavour, add a sprig of rosemary, a clove of garlic, or a knob of butter to the pan near the end of searing. A rich aromatic foam will form.
Use a meat thermometer to check doneness: for medium rare, the internal temperature should be around 55-57 °C.
