Step by step process

The base

    Put the mayonnaise in a bowl. Whisk in the chili sauce a little at a time until you have a smooth sriracha mayo with an even pink color. Stir slowly along the bottom so the sauce blends fully into the mayonnaise. Aim for a velvety texture with no streaks or bubbles.

    Add the lime juice and press in the garlic. Soften it with a spoon of honey. Whisk everything again so the lime, garlic, and honey blend evenly. The flavor should round out. Cold mayonnaise holds a firmer structure, so work with it straight from the fridge.

Seasoning and serving

    Taste the dip and add salt to your liking. Dial the heat up with more chili sauce. To soften it, stir in an extra spoon of mayonnaise. For a bolder sweet-and-spicy note, add a little more honey and let it rest briefly. Work the salt in at the very end so the dip does not thin out.
