Grilled Indian cheese paneer tikka

Step by step process
Preparing the marinade and marinating

For the paneer tikka, prepare the marinade. In a bowl mix plain yogurt, lemon juice, crushed garlic, grated ginger, turmeric, sweet and hot paprika, garam masala, ground coriander, cumin, salt and a spoon of oil. The marinade should be thick and fragrant.

Cut the paneer into cubes about 3 by 3 cm. Add them to the marinade and gently coat on all sides. Cover and chill for at least an hour. Cold helps the flavor.
Grilling on skewers

Cut the red and green pepper and onion into squares the size of the cheese cubes. Thread the cheese, pepper and onion onto the skewers in turn. Alternate the colors.

Heat a grill pan to high and brush lightly with oil. Grill the skewers for 8 to 10 minutes, turning often, until the cheese browns and the vegetables caramelize. Serve them hot with a cool yogurt and mint dip and some lemon wedges.
More tips:
Pat the cheese dry before cutting, or the marinade slides off and skewers fall apart.
Heat the pan really hot, on a warm pan the cheese sticks and stays pale.
