Braised Green Beans with Bacon

Green beans with bacon are a hearty German side dish known in Germany as Grüne Bohnen mit Speck. The tender pods are first blanched, then braised in butter with crispy bacon and onion. Step by step process

Preparing the beans

    Start with the green beans, the base of the whole side dish. Rinse the pods, trim both ends, and cut the longer pieces in half.

    Bring salted water to a boil in a pot. Drop the pods into the boiling water and blanch them for about 5 minutes so they stay tender and bright green.

    Drain the blanched pods in a colander. Rinse them briefly under cold water to stop the cooking and keep the vivid green color.

Braising with bacon

    Dice the bacon and finely chop the onion. Melt the butter in a pan and fry the bacon until it starts to crisp and renders its fat.

    TIP: 

    Cook the bacon over medium to low heat. The fat will gradually render out, the pieces will brown evenly, and they will become crispy without developing a bitter taste. If the heat is too high, the surface will burn quickly while the inside remains soft.

    Add the onion and cook it until translucent. Press in the garlic and saute it briefly, just until it perfumes the fat without burning.

    TIP: 

    Sauté the onion over medium heat until golden or translucent. Add the garlic at the end and sauté briefly to release the aroma, but do not burn it.

    Stir the drained pods into the fragrant base, season with salt and pepper, and sprinkle with savory. Braise covered over low heat for about 10 minutes until they soften and soak up the flavor.

Finishing

    Uncover the pan and heat the mixture for another 2 minutes so the excess liquid evaporates and the bacon stays crisp.

    Season the finished side dish with salt and pepper. Serve it hot with roast meat, fried schnitzel, or boiled potatoes.

More tips:

Instead of fresh pods, you can also use frozen green beans. There is no need to thaw them. Just drop them straight into the boiling water and blanch them a minute longer.
