Canadian fried BeaverTails with cinnamon sugar

BeaverTails are an iconic Canadian street treat, best enjoyed straight from a stall by the skating rink. The yeast dough is stretched by hand into a flat shape resembling a beaver's tail and fried in hot oil until golden. While still hot, it is tossed in a mix of cinnamon and sugar, so it smells wonderful and crunches. They are served right away, plain or spread with chocolate, caramel or lemon.

Step by step process

Preparing the Dough and Proofing

    For the dough, combine the warm milk (about 40 °C) with the yeast and a spoon of sugar in a bowl. Let it rest for 5-10 minutes until foamy.

    Add the remaining sugar, eggs, melted butter, and vanilla extract. Mix thoroughly.

    Gradually add the sifted flour with salt and knead the dough for about 8-10 minutes until smooth and slightly sticky.

    Cover the dough with a cloth and let it rise in a warm place for about 1 hour until doubled in size.

Shaping and Frying

    Divide the risen dough into 8 equal pieces. Roll each piece on a lightly floured surface into an oval sheet about 5 mm thick in the shape of a beaver's tail.

    Heat oil to 180 °C in a pot or deep fryer. Fry each BeaverTail for 1-2 minutes per side until golden brown. Transfer to a paper towel.

    Mix the cinnamon with sugar. Immediately coat the hot BeaverTails in cinnamon sugar and serve warm.

More tips:

Keep the oil at 180 °C, too cool soaks the dough, too hot burns the surface.

Stretch the dough thin, about 5 mm, and coat the hot BeaverTails in cinnamon sugar right away.
