Seitan
Seitan is a plant-based protein made from wheat gluten. It has a firm, chewy texture that closely resembles meat, making it one of the most popular meat substitutes in vegetarian and vegan cooking. On its own, it has a neutral flavor but absorbs marinades, sauces, and seasonings excellently. It is suitable for frying, grilling, braising, and use in soups and stir-fry dishes. In Asian cuisine, seitan has been used for centuries, particularly in Buddhist vegetarian tradition. It contains a very high proportion of protein with minimal fat. It is not suitable for people with celiac disease or gluten intolerance.
