Romanesco is a decorative cauliflower variety featuring distinctive pointed florets arranged in a striking fractal pattern. Originating from Italy, it is one of the most visually stunning vegetables available. Its flavor falls between cauliflower and broccoli, milder and slightly nutty. In the kitchen, it is prepared similarly to cauliflower: boiled, roasted, grilled, or baked in gratins. It pairs wonderfully with pasta, Parmesan cheese, or brown butter. Thanks to its shorter cooking time, it retains a pleasant crunch. Romanesco is rich in vitamin C, dietary fiber, carotenoids, and folic acid.
