Pul Biber

Pul biber is a Turkish chilli flake spice that is an essential ingredient in Turkish, Syrian and Middle Eastern cuisine. It is made by drying and crushing red peppers, most commonly the Halaby or Maraş variety. It has a vivid red colour, a pleasant fruity flavour and a mild to medium heat level. Unlike ordinary crushed chilli, pul biber is more subtle and complex, it contains naturally occurring oils that give the flakes a slightly moist and oily texture. It is used to season kebabs, soups, yoghurt sauces, eggs or vegetables. It also works beautifully sprinkled over hummus or labneh. It is widely available in Middle Eastern grocery stores and online shops.
