Psyllium

Psyllium is a natural soluble fibre derived from the husks of seeds of Plantago ovata, also known as Indian plantain. In the kitchen, it is used as a binder and thickener, it is a popular ingredient in gluten-free baking, where it effectively replaces gluten and helps dough hold its shape. Only a small amount is needed to give the dough elasticity. Psyllium swells significantly in water, so it is important to work with it quickly. It has a positive effect on digestion, helps with both constipation and diarrhoea, and contributes to lowering cholesterol levels.
