Provolone
Provolone is an Italian semi-hard to hard cheese made from cow milk with a smooth, glossy rind. It is produced using the pasta filata method, in which the curd is heated and stretched. It comes in two main varieties, Provolone Dolce is young, soft, and mildly sweet, while Provolone Piccante is aged longer and has a stronger, sharper flavor. Provolone is excellent for sandwiches, pizza, baked dishes, and cheese boards. It melts well, making it a popular alternative to mozzarella in gratins. In Italian cuisine, it is traditionally served with wine and fruit. Originating from southern Italy, it is now produced throughout the country.
