Prosciutto
Prosciutto is an Italian dry-cured ham made from pork leg, salted and aged in open air for several months. There are two main types: prosciutto crudo, which is raw and dry-cured, and prosciutto cotto, which is cooked. The most famous variety is prosciutto di Parma, a protected designation of origin product from the Parma region. It has a delicate, slightly sweet and salty flavour with a silky, melt-in-the-mouth texture. It is commonly served as an antipasto, used on pizza, in pasta dishes, salads, or paired with melon and fresh figs. Thin slices also complement cheeses and wine on charcuterie boards.
