Poličan

Poličan is a traditional Czech dry-cured salami produced in the town of Polička in the Pardubice Region. It belongs among fermented and smoked meat products with a characteristically firm texture and a dark brown rind formed during smoking. It is made from pork, and sometimes beef, with the addition of salt, spices, and starter cultures that ensure proper fermentation. Its flavour is bold, mildly sour, with a pleasant smoky aroma. It is most commonly served sliced thin as a cold delicacy, as part of charcuterie and cheese boards, or as an ingredient in sandwiches. It is a protected geographical speciality with a long tradition.
