Poblano chile is a dark green chili pepper originating from the Mexican state of Puebla. It belongs among the milder chili varieties, with a Scoville rating of 1,000-2,000 units. It has a meaty texture and a mildly earthy, slightly spicy flavor. Fresh poblanos are most commonly used for stuffing, the most famous recipe being chiles rellenos. When dried and smoked, poblano is called ancho or mulato and forms the base of many Mexican mole sauces. It also works well in salsas, soups, stews, and roasted dishes. It is one of the most widely used chili peppers in Mexican cuisine.
