Pattypan squash is a summer squash with a distinctive flat, disc-like shape and scalloped edges. It belongs to the gourd family and is closely related to zucchini. Its flavor is mild and slightly nutty, with a firmer flesh than zucchini. It is best harvested young, when it reaches about 5-10 cm in diameter. In the kitchen, it is very versatile, excellent for grilling, roasting, braising, stuffing, or making soups. It can also be eaten raw, grated into salads. Thanks to its low calorie content, it is a popular choice for light summer meals. The skin of young pattypan squash is edible and does not need to be peeled.
