Millet is one of the oldest cultivated grains in the world, naturally gluten-free and rich in magnesium, phosphorus and B vitamins. The small round grains have a mild, slightly nutty flavour and develop a fluffy texture when cooked. In the kitchen, millet is used much like rice or couscous, as a side dish, the base for porridges, soups or salads. It is also an excellent ingredient in vegan and vegetarian cooking, and its gluten-free nature makes it suitable for people with coeliac disease.
