Manchego
Manchego is a Spanish hard cheese with protected designation of origin, made exclusively from the milk of Manchega sheep in the La Mancha region. It features a distinctive rind with woven basket imprints and an ivory-yellow interior with small eyes. The flavor is rich, nutty, and slightly piquant, deepening with aging. Young Manchego is mild and creamy, while aged versions are firmer and more pronounced. It is excellent as tapas with olives and ham, on cheese boards, in salads, and paired with wine. In Spanish cuisine, it is traditionally combined with membrillo, quince paste. Manchego is a rich source of protein, calcium, and B vitamins.
