Mace

Muškátový květ

Mace is the dried red aril that wraps around the seed of the tropical nutmeg tree (Myristica fragrans). Despite its name, it is not a flower but a lacy net-like covering of the seed. Its flavour and aroma are similar to nutmeg but more delicate and complex, with hints of pepper, ginger and clove. In the kitchen it is used ground or whole in béchamel, soups, meat fillings, pâtés, sweet desserts and liqueurs. It also features in spice blends such as garam masala. It originates mainly from Indonesia and Grenada.
