Lavender is an aromatic herb from the Mediterranean region, used not only in perfumery and aromatherapy but also in cooking. Its flowers have an intense, floral, and slightly camphor-like aroma with a gently bittersweet taste. In gastronomy, it is used as a spice in Provençal cuisine and is a key component of the Herbes de Provence blend. It pairs well with desserts, ice cream, lemonades, honey, syrups, and pastries. It also complements citrus, vanilla, and chocolate beautifully. When cooking, it is important to use it sparingly, as too much lavender can make a dish overly bitter. Dried or fresh flowers are most commonly used.
