Kadayif pastry

Kadayif pastry, also known as kataifi, is a special Middle Eastern dough pressed into thin strands that look like angel hair pasta. It is used mainly for sweet desserts — the most famous is knafeh with cheese and syrup, and baked nut-filled rolls are popular too. Baked with butter it turns golden and wonderfully crisp. You can buy it fresh or frozen in Turkish and Middle Eastern grocery stores; let it thaw and tear it into shorter strands before use.
