Jitrnice

Jitrnice is a traditional Czech sausage made from pork offal, head meat, rinds and other parts, seasoned with spices such as marjoram, garlic, pepper and caraway. Unlike jelito, which contains blood and pearl barley, jitrnice is prepared without blood, giving it a lighter colour and milder flavour. The mixture is stuffed into casings and then boiled or baked. Jitrnice is an essential part of the Czech zabijačka, the traditional pig slaughter feast, and is served warm with bread, mustard and sauerkraut. Its flavour is bold thanks to the combination of spices and offal. It can also be pan-fried until crispy for an even more intense taste and texture.
