Jerusalem Artichoke
The Jerusalem artichoke, also known as sunchoke, is a tuberous vegetable native to North America that has been cultivated in Europe since the 17th century. The tubers have an irregular shape resembling ginger and a creamy white to brownish flesh with a mildly nutty and sweet flavor. In the kitchen, they can be prepared in many ways, boiled, roasted, fried, gratinated, or eaten raw and grated into salads. They are an excellent source of inulin, dietary fiber, and potassium. However, consuming large amounts may cause digestive discomfort in sensitive individuals due to their high fructooligosaccharide content.
