Guar gum is a natural food additive derived from the seeds of the guar bean, a legume grown primarily in India and Pakistan. In the food industry, it is used as a thickener, stabilizer, and binder, it carries the designation E412. It is added to ice creams, yogurts, salad dressings, sauces, gluten-free baked goods, and instant soups. It is highly effective even in small quantities, less than 1% is enough to thicken a liquid. Guar gum is tasteless and odorless, so it does not affect the flavor profile of products. It is also a source of dietary fiber and can have a positive effect on digestion.
