Gruyère

Gruyère is a Swiss hard cheese with protected designation of origin, made from cow milk in the canton of Fribourg. It has a creamy yellow color, compact structure with tiny eyes, and a complex flavor, sweet, nutty, and slightly salty, deepening with age. It matures for a minimum of five months, with premium varieties aging over a year. Gruyère is an essential component of classic Swiss fondue and French onion soup. It is excellent for gratins, quiche, croque monsieur, and baked dishes, as it melts beautifully. It also works wonderfully as a table cheese on cheese boards.
