Ground allspice is dried and finely milled spice obtained from the berries of Pimenta dioica. Its aroma resembles a blend of cloves, cinnamon, nutmeg, and pepper. Compared to whole berries, the ground form incorporates more easily and evenly into doughs, marinades, meat mixtures, and sauces without the need to remove it before serving. It is used in gingerbread dough, meatballs, pâtés, minced meat dishes, and throughout Caribbean cuisine. Ground allspice is more intense in flavour, so it is used in smaller quantities. It can be stored in an airtight container away from light and heat for approximately one year.
