Green curry paste is a spicy seasoning paste originating from Thai cuisine, made from green chilli peppers, lemongrass, galangal, coriander, garlic, shallots, shrimp paste, and other aromatic ingredients. It has a distinctly spicy flavor with herbal and citrusy notes and a vibrant green color. It is used as the base for Thai curry dishes, most commonly combined with coconut milk, chicken, shrimp, or tofu. A brief fry in oil or coconut milk is enough to release its full aroma. It is one of the spicier Thai curry pastes. Available ready-made in Asian grocery stores, it can also be prepared at home from fresh ingredients.
