Hummus is one of the most famous dips in the world. The base is cooked chickpeas blended with tahini, garlic, lemon juice, and olive oil. The name comes from Arabic and simply means chickpea.
The secret is peeling the chickpeas and using plenty of tahini. It is served with a well drizzled with olive oil and fresh pita bread.
