For udon noodles with beef, prepare all the ingredients. Slice the beef thinly against the grain, cut the carrot and bell pepper into strips, and finely chop the ginger and garlic.

Sprinkle the meat slices with cornstarch, drizzle with soy sauce, and mix. Let it marinate for 15 minutes so the starch coats and tenderizes the meat.
TIP:Before quickly stir-frying in a wok, marinate the meat in soy sauce, wine, or another liquid with a little starch. It creates a delicate coating, keeps the meat juicy, and lightly thickens the sauce.
Cooking and stir-frying

Bring water to a boil in a large pot and cook the noodles according to the package instructions, usually 3 minutes. Drain them and rinse under cold water.

Meanwhile, heat a wok with canola oil over high heat and stir-fry the beef in a single layer for about 2 minutes until browned. Then set the meat aside.
TIP:Do not overcrowd the wok or pan. Sear the meat in smaller batches over high heat so it sears quickly, does not release too much juice, and develops a rich flavor and color instead of steaming.

Toss the ginger, garlic, carrot, and bell pepper into the wok and stir-fry for 3 minutes, stirring constantly, so the vegetables stay crisp.

Return the meat, add the drained noodles and most of the green onions, and pour in the sauce of soy sauce, oyster sauce, mirin, and sesame oil. Stir-fry for 2 minutes until everything is heated through and coated in sauce.
Serving

Divide the finished noodles among bowls, sprinkle with sesame seeds and the remaining green onions, and serve immediately.
More tips:
Slice the beef against the grain into the thinnest possible pieces, ideally slightly frozen.
Heat the wok to maximum and stir-fry the meat in smaller batches, not all at once.
