Traditional Japanese Noodle Soup Kitsune Udon

Kitsune udon comes together as a Japanese noodle soup where a smooth dashi broth meets sweet fried tofu. You draw the broth from kombu seaweed and shiitake mushrooms so it stays plant-based, then season it with soy sauce, mirin, and sugar. You simmer the fried tofu in a sweet glaze, cook the udon noodles, and pour the hot broth over them. You garnish with tofu, shiitake slices, spring onion, and sesame and serve it right away.

Step by step process

Dashi broth

    For the kitsune udon, first make the broth. Wipe the kombu and soak it with the shiitake in cold water, then slowly bring almost to a boil. Just before boiling, remove the kombu so the broth does not turn bitter.

    Let the broth steep with the shiitake for 10 minutes, then remove the mushrooms and slice them. Season the broth with soy sauce, mirin, sugar and a pinch of salt to a gently sweet umami flavor.

Sweet fried tofu

    Pat the tofu dry and cut it into thicker slices. Fry it golden on both sides in a little oil so it firms up on the outside.

    TIP: 

    Pressing reduces the water content and improves marinade absorption. Pat the tofu dry before marinating and squeeze out the water (15-30 minutes). The marinade can also be used as a dressing for an even richer flavor.

    Transfer the fried tofu to a small saucepan, pour over soy sauce, mirin, sugar and a little broth and simmer for 5 minutes until it soaks up the sweet glaze.

Cooking the noodles

    Bring water to a boil in a large pot and cook the udon noodles according to the package instructions, usually 3 minutes. Drain them and rinse briefly with hot water so they stay hot.

Serving

    Divide the hot noodles into bowls, pour over the hot dashi broth and arrange the sweet tofu and shiitake slices on top. Sprinkle with spring onion and sesame seeds and serve immediately.

More tips:

Never boil kombu hard or wash it under water, because the white film on the surface is pure umami.

Pat the tofu thoroughly dry before frying so it sets in the pan and does not fall apart.
