Sernik (Polish Cheesecake)

Step by step process
Base

For the sernik, crush the butter biscuits finely. Mix them with the melted butter and press firmly into the bottom of a cake tin.
TIP:Mix crushed cookies with melted butter and a pinch of salt until the mixture holds its shape. This crispy crust is also ideal for other desserts with cookies.

Chill the base in the fridge for 10 minutes to set. Meanwhile, preheat the oven to 160 °C.
Cheese filling

Beat the curd cheese with the sugar, vanilla sugar and lemon zest until smooth.
TIP:When grating, use only the thin yellow layer of zest. The white part is bitter and will spoil the dressing's flavor. Before using it, gently wipe it off to leave only the fresh lemon aroma.

Beat in the eggs one at a time. Then stir in the sour cream and potato starch until smooth.
Baking and maturing

Pour the filling onto the base and smooth it out. Bake at 160 °C for about 60 minutes, until the edges set and the centre only wobbles slightly.

Let the cake cool in the oven with the door ajar. Then chill it in the fridge for several hours to mature.
More tips:
Have all the ingredients at room temperature so the filling combines nicely and the top does not crack.
Slow cooling in the oven and a night in the fridge are the key to a dense, creamy texture.
