Flaki is a traditional Polish tripe soup made from beef tripe slowly simmered in an aromatic broth with root vegetables, marjoram and sweet paprika. A hearty, warming dish that comforts in winter and after a hard day.

Step by step process

Preparing the tripe

    For the flaki, wash the tripe thoroughly and put it in a pot with the beef broth. Bring to a boil, skim off the foam and simmer over low heat for about two hours, until tender.

    Meanwhile, peel the onion, carrot, parsley root and celeriac. Cut the vegetables into fine strips or grate them coarsely.

    Remove the softened tripe, let it cool and cut it into thin strips. Strain the broth and return it to the pot.

Vegetables and seasoning

    Add the chopped vegetables, bay leaf and allspice to the broth. Cook for about twenty minutes, until the vegetables soften.

    Return the cut strips to the pot and heat through. Season with sweet paprika, marjoram, nutmeg, salt and pepper.

Thickening and serving

    Melt the butter in a pan, stir in the flour and fry a light roux while stirring. Thin it with a little hot broth and pour it into the soup.

    Simmer the soup for another ten minutes, so it thickens and the flavours come together. Serve hot, sprinkled with fresh marjoram and with a crust of bread.

More tips:

Real flaki needs time – the tripe must simmer slowly for two to three hours, otherwise it stays tough and rubbery.

The soup gains even more flavour the next day. Feel free to cook it ahead and just reheat it before serving.
