Preparing the meat

    For the pork tenderloin with apricot sauce, first prepare the meat. Trim the cut of silver skin and pat it dry. Season it with salt and pepper. Heat the olive oil in a pan. Sear the meat on all sides until golden. Then move it to a plate and let it rest for a moment.

Apricot sauce

    In the same pan, melt the butter and soften the finely chopped onion in it. Add the halved and stoned apricots, a spoon of honey and the Dijon mustard. Pour in the broth. Stirring occasionally, simmer for about 10 minutes, until the fruit is soft. Blend the finished mixture smooth with a hand blender and season with salt and pepper.

Finishing and serving

    Return the seared meat to the pan and warm it briefly in the sauce. You can also finish it in an oven preheated to 180 °C for about 8 minutes. It should stay slightly pink and juicy inside. Let it rest for 5 minutes before slicing.

    Cut the rested meat into thicker medallions. Arrange them on plates and pour the warm apricot sauce over them. Mashed potatoes, rice or bread go wonderfully with it.

More tips:

Do not overcook the tenderloin, a pink center stays juicy while fully cooked meat tends to be dry.

Want a thicker sauce? Simmer it a few minutes longer, soften a thinner one with a spoon of cream.
