The sauce base

    Transfer the onion and garlic to a saucepan, add the ketchup and tomato paste and stir everything into a smooth, lump-free mixture. Pick a taller pot, since the sauce likes to spit as it simmers.

Simmering and seasoning

    Pour in the apple cider vinegar and Worcestershire sauce, stir in the brown sugar, Dijon mustard and smoked paprika, then let it bubble briefly so the spices open up and the sugar slowly dissolves.
